Illy Coffee Pods

What is the effect in terms of taste and chemistry of over-extraction of coffee, especially espresso?

We have a illy espresso coffee pods at work. Many of my colleagues make a cup of Joe's full size by running a 6 oz of H20 through a sheath. I try to discourage this practice, by instinct, but I wondered if the experts could prepare coffee talk about the bitter-tasting alkaloids, etc. that can be promoted by making coffee this way.
